Sweet & Sour Meatballs w/Rice

Can use vinegar instead of lemon juice.

Cook time: 4 minutes

Ingredients
- 1 lb ground beef
- 1/2 lb ground lean pork
- 2 eggs
- 1 tsp accent
- 1/2 tsp salt
- 4 twists of a pepper mill
- 3 onions sliced very thin
- 1 c celery sliced very thin
- 1/2 c water
- 1/4 c lemon juice
- 1/4 c light brown sugar
- 1 tsp bead molasses
- 1 tbsp soy sauce
- 2 c instant rice
- 2 c water
- 2 tbsp chopped almonds
- 1 tbsp chopped pimento
Directions

mix the beef, pork, eggs, accent, salt, & pepper very thoroughly.

Form into meatballs about the size of walnuts.

Plunge meatballs into rapidly boiling water one at a time.

Remove them to drain as soon as they are firm.

Brown the meatballs in a large frying pan.

Add onions & celery & cook until tender.

Mix water, lemon juice, sugar, molasses, & soy sauce.

Pour over the meatballs & let simmer.

Cook rice in water in an uncovered pan.

Set aside for 5 min.
