Pineapple Pound Cake

Ingredients
- 1 c (8 oz) crushed pineapple in own juices
- 1/2 lb butter
- 1/2 c shortening
- 3 c sugar
- 5 eggs
- 3 c sifted flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 c milk (room temp)
- 1 tbsp vanilla extract
Directions

Thoroughly drain pineapple. (reserve juices)

Cream together butter, shortening, & sugar until light & fluffy.

Add eggs one at a time.

Beat well after each addition.

Sift together flour, baking powder, & salt.

Add alternately with milk until well blended.

Add vanilla & lemon extract.

Fold in fruit.

Pour batter into greased & floured 9×10 inch tube pan.

Place in cold oven & bake at 350 degrees.

Cool on rack.

Remove from pan & serve.
