Ingredients
- 8 apricot halves
- 1 tbsp sugar
- 2 oz goat cheese
- 1 tbsp fresh mint
- 1/2 cup salted toasted pistachios (chopped)
Directions

eat oven to 350 degrees. Place 8 fresh apricot halves on foil-lined jelly-roll pan, cut sides up; sprinkle with 1 Tbsp sugar. Bake 20 minutes or until tender and browned. Divide 2 oz goat cheese among hot apricots; sprinkle with 1 Tbsp fresh mint leaves, chopped, and 1/2 c salted pistachios, toasted and chopped. Serves 4.
