Ingredients
- 1 lemon, divided
- 1 lb baby carrots, trimmed
- 1/4 cup chicken broth
- 1 tbsp butter
- 1 slice (1/4 inch thick) fresh ginger
- 1/2 tsp sugar
Directions

Cut two 2" strips of peel from lemon; juice lemon. In large skillet over medium heat, combine carrots, chicken broth, butter, ginger, sugar, and lemon-peel strips. Cover and let simmer 10 min. or until baby carrots are tender. Remove cover. Add 1 Tbsp lemon juice; let simmer 2 minutes or until liquid is reduced to 2 Tbsp. Remove ginger and lemon peel. Arrange carrots on platter.
