Snickerdoodles

Ingredients

  • 12 oz (2-2/3 c) unbleached all purpose flour
  • 1 tsp baking soda
  • 1/4 tsp table salt
  • 2 tsp cream of tarter
  • 1/2 lb (1 c) unsalted butter (softened at room temp)
  • 1-3/4 c granulated sugar
  • 2 large eggs
  • 2 tbs ground cinnamon

Directions

  1. Position a rack in the center of the oven and heat the oven to 350 degrees.

  2. In a medium bowl whisk the flour, baking soda, salt, and cream of tarter to blend.

  3. Beat the eggs until thoroughly combined.

  4. Slowly blend in the flour until incorporated.

  5. In a small bowl mix the cinnamon and remaining 1/4 c of sugar.

  6. Drop the dough by rounded tablespoons into the cinnamon sugar & roll around to coat.

  7. Set the balls of dough about 3 inches apart on greased cookie sheets.

  8. Bake until golden brown on the edges and slightly soft in the middle.

  9. Let the cookies cool on the sheet before transferring them to a rack to cool fully.
