Passionfruit and Pistachio Slice

Easy no-bake recipe which keeps well in frig.
Can also add chopped apricots to base for a nice change of flavour.

Ingredients
- Base:
- 250g packet wine biscuits, crushed
- 1/3 C pistachio nuts, coarsely chopped
- 1/2 x 395g tin sweetened condensed milk
- 100g melted butter
- zest 1 lemon
- Icing:
- 1 C icing sugar
- 25g butter, softened
- 2 T passionfruit pulp

Base:

Combine all ingredients in bowl, mixing thoroughly.

Place mixture in lined slice tin, press down firmly.

Refrigerate while making icing.

Icing:

Sift icing sugar, add butter and passionfruit and milk if necessary to make a spreadable consistency.

Spread over set base, and let icing set before cutting into fingers.
