Ingredients
- 3 c unbleached all purpose flour
- 1 tsp salt
- 2 tbsp sugar
- 7 tbsp all vegetable shortening (chilled)
- 10 tbsp unsalted butter (chilled & cut into 1/4 in pieces)
- 10 tbsp ice water
Directions

Mix flour, salt, & sugar until well combined.

Add shortening & mix until mixture has the consistency of coarse sand.

Scatter butter pieces over flour mixture.

Blend butter into flour until mixture is pale yellow & resembles coarse crumbles with butter bits no larger than small peas.

Sprinkle 8 tbsp ice water over mixture.

With a spatula use folding motion to mix.

Press down on dough with broad side of spatula until dough sticks together.

Add up to 2 more tbsp of ice water if dough does not come together.

Divide dough into two pieces, one slightly larger than the other.

If possible weigh pieces. (they should weigh 16 oz & 14 oz)

Flatten larger piece into a rough 5 inch square & the smaller into a 4 inch disk.

Wrap separately in plastic & refrigerate at least 1 hr or up to 2 days before rolling.
