Pancakes

Ingredients

  • 1 egg lightly beaten, 1 tbsp. melted butter, 3/4 cup milk, 1 tsp. vanilla, 3/4 cup flour, 1 tsp. baking powder, 1 tsp. baking soda, pinch salt, 1/2 tbsp. honey, 1 tsp. cinnamon.
  • Add-ins: 1 mashed banana, 2 tbsp. cocoa powder or blueberries.

Directions

  1. In a large bowl sift and whisk flour, baking powder, baking soda, salt and cinnamon (cocoa if using). In another bowl whisk eggs, milk, vanilla, honey and butter. Make a well in the flour mix and pour in the wet ingredients. Fold only till combined. At this point fold in bananas if using. Spray pancake pan and place on medium low. Ladle batter and cook till bubbles form on top before flipping and cooking the other side till golden.

  2. Keep warm in pre-heated oven.
