Prawn Laksa

Quick and delicious
Substitute chicken for prawns

Prep time: 10 minutes
Cook time: 10 minutes
Serves 4 people

Ingredients

  • 500 g vermicelli or egg noodles
  • 1 onion, chopped
  • 3 T oil
  • 3 T red curry paste
  • 4 C chicken stock
  • 400 ml lite coconut cream
  • 400 g raw prawns
  • 2 C vegetables - eg: bean sprouts, broccoli

Directions

  1. Cook vermicelli or noodles as per packet instructions.

  2. Fry onion in oil; add curry paste to release flavours.

  3. Add chicken stock; simmer 5 minutes.

  4. Add coconut cream, prawns and vegetables.

  5. Simmer 3 minutes.

  6. Divide noodles into bowls and top with soup.

  7. Serve immediately.

  8. Note: if using chicken breast, add at point when adding chicken stock.
