Prawn Laksa

Quick and delicious
Substitute chicken for prawns
Prep time: 10 minutes
Cook time: 10 minutes
Serves 4 people

Ingredients
- 500 g vermicelli or egg noodles
- 1 onion, chopped
- 3 T oil
- 3 T red curry paste
- 4 C chicken stock
- 400 ml lite coconut cream
- 400 g raw prawns
- 2 C vegetables - eg: bean sprouts, broccoli
Directions

Cook vermicelli or noodles as per packet instructions.

Fry onion in oil; add curry paste to release flavours.

Add chicken stock; simmer 5 minutes.

Add coconut cream, prawns and vegetables.

Simmer 3 minutes.

Divide noodles into bowls and top with soup.

Serve immediately.

Note: if using chicken breast, add at point when adding chicken stock.
