butter chick

Serves 5 people

Ingredients

  • 2 tbsp butter
  • 1 1/2 cups onion, chopped
  • 2 tsp garlic, minced
  • 1 tbsp gingerroot, grated
  • 1 1/2 tsp chili powder
  • 3/4 tsp ea. coriander and
  • tumeric
  • 1/2 tsp ea cinnamon
  • cumin
  • 1 can (28oz) diced tomatoes, drained
  • 1 1/2 cups chicken broth
  • 1 tbsp brown sugar
  • 1/4 salt and pepper
  • 1 whole rotisserie chicken, cooked and skinless
  • 1/3 cup sour cream
  • rice

Directions

  1. melt butter in soup pot over medium heat

  2. add onions and garlic, cook for 5 min

  3. add gingerroot, chill, coriander, turmeric, cinnamon and cumin, cook 1 min

  4. add tomatoes, broth, brown sugar, salt and pepper

  5. reduce heat, cover and simmer 10 min

  6. remove from heat

  7. puree 1/2 of the sauce in blender, return to pot

  8. return to heat, stir in chicken

  9. cook until chicken is heated through

  10. remove from heat, stir in sour cream
