Ingredients
- 2 tbsp butter
- 1 1/2 cups onion, chopped
- 2 tsp garlic, minced
- 1 tbsp gingerroot, grated
- 1 1/2 tsp chili powder
- 3/4 tsp ea. coriander and
- tumeric
- 1/2 tsp ea cinnamon
- cumin
- 1 can (28oz) diced tomatoes, drained
- 1 1/2 cups chicken broth
- 1 tbsp brown sugar
- 1/4 salt and pepper
- 1 whole rotisserie chicken, cooked and skinless
- 1/3 cup sour cream
- rice
Directions

melt butter in soup pot over medium heat

add onions and garlic, cook for 5 min

add gingerroot, chill, coriander, turmeric, cinnamon and cumin, cook 1 min

add tomatoes, broth, brown sugar, salt and pepper

reduce heat, cover and simmer 10 min

remove from heat
-
puree 1/2 of the sauce in blender, return to pot

return to heat, stir in chicken

cook until chicken is heated through
-
remove from heat, stir in sour cream
