Ingredients
- 12 bonless skinless chicken thighs, halved
- 1 cup onion, chopped
- 1 cup red bell pepper, chopped
- 2 tsp garlic, minced
- 1 1/2 tbsp gingerroot, grated
- 1 1/2 tps ea curry powder
- chili powder
- 1/2 tsp ea tumeric
- cinnamon
- 1 can (14oz) coconut milk
- 1/4 cup mango chutney
- lemon zest
- 1/2 tsp salt
- 1 cup golden delicious apple, peeled, cored and chopped
- 1/2 cup frozen peas
Directions

spray non-stick skillet and heat over medium-high heat

add chicken, lightly brown (~2 min per side)

remove chicken and keep warm

ad onions, pepper and garlic, cook 3 min

add spices, cook 1 min

add coconut milk, chutney, lemon zest and salt

stir in chicken and apple pieces

reduce heat, cover and simmer for 15 min

add peas and simmer uncovered for 5 more min
