coconut-curry chicken

Serves 6 people

Ingredients

  • 12 bonless skinless chicken thighs, halved
  • 1 cup onion, chopped
  • 1 cup red bell pepper, chopped
  • 2 tsp garlic, minced
  • 1 1/2 tbsp gingerroot, grated
  • 1 1/2 tps ea curry powder
  • chili powder
  • 1/2 tsp ea tumeric
  • cinnamon
  • 1 can (14oz) coconut milk
  • 1/4 cup mango chutney
  • lemon zest
  • 1/2 tsp salt
  • 1 cup golden delicious apple, peeled, cored and chopped
  • 1/2 cup frozen peas

Directions

  1. spray non-stick skillet and heat over medium-high heat

  2. add chicken, lightly brown (~2 min per side)

  3. remove chicken and keep warm

  4. ad onions, pepper and garlic, cook 3 min

  5. add spices, cook 1 min

  6. add coconut milk, chutney, lemon zest and salt

  7. stir in chicken and apple pieces

  8. reduce heat, cover and simmer for 15 min

  9. add peas and simmer uncovered for 5 more min
