Smoked Salmon, Cream Cheese Pinwheel Scones

Very tasty straight from the oven, or cold to take on a picnic or in school lunches!!

Ingredients
- 3 C self raising flour
- 1/2 t salt
- 50 g butter
- 1/2 C parmesan cheese, grated
- 1 1/2 C milk
- 2250 g cream cheese
- 2 T capers, roughly chopped
- 1 C rocket or spinach, roughly chopped
- 200 g hot-smoked salmon
- extra grated parmesan (optional)
Directions

Sift flour & salt into bowl.

Rub in butter until mixture resembles breadcrumbs.

Stir in cheese and enough milk to make a firm, moist dough.

Turn dough onto floured surface; roll into 30cm square.

Mix cream cheese and capers until soft; spread over the dough.

Spread over the rocket followed by salmon.

Roll up to form a log; cut into 8 rounds.

Place on lined baking tray; bake at 210oC approx 20-25 minutes.
