Bircher Muesli with Mixed Nuts

Delicious and healthy breakfast

Serves 6 people

Ingredients
- 2 C rolled oats
- 1/3 C dried apricots, sliced
- 2 T sultanas
- 1 1/2 C apple juice
- 50 g raw pecans, chopped
- 50 g raw macadamias, chopped
- 50 g raw cashews, chopped
- 1 medium red apple, thinly sliced
- 1/2 C natural yoghurt
Directions

Place oats and dried fruit in bowl; pour over apple juice and refrigerate, covered, overnight.

Toast nuts; add to softened oat mixture along with apple and yoghurt.

Will keep in refrigerator 2-3 days; can be served warm if liked.
