Christmas Cake

Nice even when made at last minute

Ingredients
- 1 Kg mixed dried fruit
- 2 C water
- 2 C brown sugar
- 250 g butter
- 1 T golden syrup
- 1/2 t salt
- 1 t baking soda
- 3 C flour
- 2 t baking powder
- 1 t mixed spice
- 3 eggs, lightly beaten
- vanilla and brandy essence to taste
Directions

Place first seven ingredients into saucepan; bring to boil and simmer 10 minutes. Cool.

Add flour, baking powder and spice sifted, along with eggs and essences.

Bake in well lined 20 – 25cm baking tin approx 2 hours at 160oC until skewer inserted into middle of cake comes out clean.
