Christmas Cake

Nice and moist, and can be made at last minute even

Serves 16 people

Ingredients

  • 1 Kg mixed dried fruit
  • 2 C water
  • 2 C brown sugar
  • 250 g butter
  • 1 T golden syrup
  • 1/2 t salt
  • 1 t baking soda
  • 3 C flour
  • 2 t baking powder
  • 1 t mixed spice
  • 3 eggs, lightly beaten
  • vanilla and brandy essence to taste

Directions

  1. Place first seven ingredients in saucepan, bring to boil and simmer 10 minutes; cool.

  2. Add sifted dry ingredients, eggs and essences.

  3. Spoon into well lined 20-23cm cake pan, bake at 160oC approx 2-2 1/2 hours, until skewer inserted into middle of cake comes out clean.

  4. Cool in pan, before storing for cake to mature.
