Christmas Cake

Nice and moist, and can be made at last minute even

Ingredients
- 1 Kg mixed dried fruit
- 2 C water
- 2 C brown sugar
- 250 g butter
- 1 T golden syrup
- 1/2 t salt
- 1 t baking soda
- 3 C flour
- 2 t baking powder
- 1 t mixed spice
- 3 eggs, lightly beaten
- vanilla and brandy essence to taste
Directions

Place first seven ingredients in saucepan, bring to boil and simmer 10 minutes; cool.

Add sifted dry ingredients, eggs and essences.

Spoon into well lined 20-23cm cake pan, bake at 160oC approx 2-2 1/2 hours, until skewer inserted into middle of cake comes out clean.

Cool in pan, before storing for cake to mature.
