Jax’s Doris Blush Cake

Nice as dessert or cake with coffee

Ingredients
- 200g butter, softened
- 1 C caster sugar
- 3 eggs
- 1 t vanilla essence
- 2 C flour
- 2 t baking powder
- 70 g ground almonds
- 1/2 C sour cream, at room temperature
- 1/2 C milk, at toom temperature
- 850g can Black Doris plums, drained and stones removed
Directions

Cream butter and sugar, add eggs singly, beating well after each addition; add vanilla.

Sift flour and baking powder, add almonds.

Mix sour cream and milk together.

Fold flour and milk mixture into butter mix.

Spoon half batter into paper-lined 23cm round pan; top with plums and then remaining batter.

Bake at 160oC for 1 hour – 1 hour 10 minutes, until cooked.

Serve with yoghurt mixed with some lemon zest.
