Ingredients
- Dressing:
- 1/2 cup vegetable oil
- 1/4 cup red-wine or raspberry wine vinegar
- 1/2 tsp salt
- 1/8 tsp hot-pepper sauce or to taste
- I used the following ingredients, so adjust as to how much you want
- 4 cans (16oz) black beans, rinsed and drained
- 2 cans (11 oz) Mexican style corn, drained
- 1/2 cup chopped scallions
- 1 large ripe tomato, finely chopped
- 1 avocado, peeled and chopped (I did not add this), but the recipe calls for it – add just before serving
