MEXICAN CAVIAR

Ingredients

  • Dressing:
  • 1/2 cup vegetable oil
  • 1/4 cup red-wine or raspberry wine vinegar
  • 1/2 tsp salt
  • 1/8 tsp hot-pepper sauce or to taste
  • I used the following ingredients, so adjust as to how much you want
  • 4 cans (16oz) black beans, rinsed and drained
  • 2 cans (11 oz) Mexican style corn, drained
  • 1/2 cup chopped scallions
  • 1 large ripe tomato, finely chopped
  • 1 avocado, peeled and chopped (I did not add this), but the recipe calls for it – add just before serving

Directions

  1. I put all of the ingredients in a large bowl (beans, corn, tomato, onions, etc) and then added the dressing ingredients and stirred
