Roasted Corn With Basil-Shallot Vinaigrette

Ingredients

  • 3 cups corn
  • 2 tablespoon olive oil
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon shallot, minced
  • 1 tablespoon red wine vinegar
  • 1/4 teaspoon salt
  • Ground black pepper to taste

Directions

  1. Preheat oven to 450 degrees.

  2. Toss corn and oil to coat.

  3. Spread out on a large baking sheet.

  4. Bake, stirring once, until some kernels begin to brown, about 20 minutes.

  5. Combine basil, shallot, vinegar, salt and pepper in a medium bowl.

  6. Add the corn; toss to coat.
