Coconut Kisses

Can be served singly or joined in pairs with butter icing

Serves 18 people

Ingredients
- 115 g butter
- 2 T hot water
- 1/2 C sugar
- 1 C flour
- 1 t baking powder
- pinch salt
- 3/4 C coconut
Directions

Melt butter and hot water.

Add remaining ingredients; stand few minutes for mixture to firm.

Bake in teaspoon lots on baking paper at 170oC approx 15 minutes, until firm and lightly coloured.

(I use a small icecream scoop, three quarter filled, for uniform sized biscuits.)
