Zucchini Pudding

Ingredients
- 2 medium zucchini, grated, rinsed and drained
- 1/2 medium onion, chopped
- 4 eggs
- 1/2 cup vegetable oil
- 1/4 tsp pepper
- pinch salt
- 2 tsp fresh parsley, chopped
- 1 cup dry bread crumbs
Directions

eheat oven to 350.

Squeeze zucchini to remove any excess moisture. Set aside.

In a bowl, combine onion and eggs.

Add zucchini and oil; mix well.

Add pepper, salt, parsley and bread crumbs; stir until well-mixed.

Bake for 45 minutes in a lightly-greased 12-cup muffin tin.
