Zucchini Pudding

Ingredients

  • 2 medium zucchini, grated, rinsed and drained
  • 1/2 medium onion, chopped
  • 4 eggs
  • 1/2 cup vegetable oil
  • 1/4 tsp pepper
  • pinch salt
  • 2 tsp fresh parsley, chopped
  • 1 cup dry bread crumbs

Directions

  1. eheat oven to 350.

  2. Squeeze zucchini to remove any excess moisture. Set aside.

  3. In a bowl, combine onion and eggs.

  4. Add zucchini and oil; mix well.

  5. Add pepper, salt, parsley and bread crumbs; stir until well-mixed.

  6. Bake for 45 minutes in a lightly-greased 12-cup muffin tin.
