Salmon Quiche

Serves 6 people

Ingredients

  • 1 9-inch frozen pastry shell, thawed
  • 4 eggs
  • 1 1/2 cups whole milk
  • 1/2 tsp salt
  • pinch ground nutmeg
  • pinch black pepper
  • 1 cup shredded Swiss or Cheddar
  • 1/2 cup canned boneless, skinless salmon
  • 2 green onions, finely chopped

Directions

  1. eheat oven to 400.

  2. Prick bottom of pastry shell with a fork; partially bake in pre-heated oven for 8 minutes.

  3. move from oven; reduce heat to 350.

  4. In a small bowl, beat eggs.

  5. Stir in milk, salt, nutmeg and pepper.

  6. Spread cheese, salmon and green onions in pastry shell; pour egg mixture over top.

  7. Bake for 35 minutes or until a knife inserted in the centre comes out clean.

  8. Let stand 10 minutes before cutting into slices.
