Spicy Turkey Burgers with Tzatziki

Serves 2 people
Ingredients
- 1/2 pound(s) uncooked ground turkey breast, lean
- 1 small uncooked zucchini, coarsely shredded
- 1 Tbsp uncooked onion(s), finely grated
- 1 Tbsp cilantro, fresh, finely chopped
- 1/2 small jalapeño pepper(s), seeded and minced (wear gloves to prevent irritation)
- 1 tsp olive oil, or vegetable oil
- 1/2 cup(s) low fat plain yogurt
- 1/3 cup(s) cucumber(s), finely diced or sliced seeded peeled cucumber
- 1 clove(s) (medium) garlic clove(s), minced
- 1/2 tsp lime zest, grated
- 1 1/2 tsp fresh lime juice
Directions
- To make the burgers, combine the turkey, zucchini, onion, cilantro, and jalapeño pepper in a bowl until well mixed. Shape into 4 patties.
- Heat 1/2 teaspoon of the oil in a large nonstick skillet over medium-high heat. Add the burgers and cook until golden and cooked through, about 12 minutes, turning the burgers halfway through and adding the remaining 1/2 teaspoon oil to the pan after turning them.
- Meanwhile, to make the tzaziki sauce, stir together the yogurt, cucumber, garlic, lime zest, and juice in a small bowl. Serve with the burgers. Yields 2 burgers and generous 1/3 cup sauce per serving.
