Ingredients
- 1 cup (usually about 3) SUPER ripe bananas, mashed up
- 1/2 cup vegetable oil
- 2 eggs
- 1 tsp. vanilla
- 1 3/4 cups gluten-free flour
- 2/3 cup sugar
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. baking soda

Beat wet ingredients together for a bit, then set aside.

In another bowl mix dry ingredients together

Next add the dry mixture into the banana, oil and egg mixture a little bit at at time. Pour into the greased bread pan.

Bake at 350 for 55 – 60 minutes.

Let the loaf cool on a wire rack for 10 minutes before removing it from the pan.
