Elderflower cordial

Ingredients

  • 10 elderflower heads
  • 300g caster sugar
  • zest and juice of 2 lemons
  • zest and juice of 1 orange

Directions

  1. Gently rinse the elderflower. Place in a bowl and pour over 500ml boiling water. Add the sugar and the zests, and stir well until the sugar has dissolved. Allow to cool, then stir in the juices.

  2. Pour into a large jug and dilute with iced water to taste. Chill until ready to serve, then strain into glasses.
