Peanut Butter Cupcakes

Ingredients

  • 2 c brown sugar
  • 1/2 c shortening
  • 1 c peanut butter
  • 2 eggs
  • 1 1/2 c milk
  • 1 tsp vanilla
  • 2 1/2 c flour
  • 1 tsp cream of tartar
  • 1 pinch salt

Directions

  1. Preheat over to 350 degrees

  2. Line cupcake pan with paper liners, or grease and four cups.

  3. In a large bowl, mix together the brown sugar, shortening, and peanut butter until light and fluffy.

  4. Add eggs on at a time, then stir in the vanilla.

  5. Combine the flour, cream of tartar, baking soda and salt; stir into the batter alternately with the milk.

  6. Spoon into the prepared muffin cups.

  7. Bake for 15 to 20 minutes in the preheated oven. Cool in pan for at least 10 minutes before removing to a wire rack to cool completely.
