Crustless Quiche Lorraine

Ingredients

  • 8 large eggs
  • 2 cups heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 6 shakes tabasco
  • 2 scallions chopped
  • 8 slices bacon cooked crisp
  • 3 cups shredded swiss cheese

Directions

  1. eheat oven to 350. Spray 10 inch pie pan.

  2. In a large bowl, whisk together eggs, cream, salt, pepper, and tabasco. Stir in scallions, bacon and cheese, whisking til blended.

  3. Pour quiche batter into prepared pan and bake til knife inserted comes out clean and quiche has puffed above rim of dish, 40-50 minutes.
