Pasta with Garbanzo Beans

quick, easy, great for meatless meal in Lent

Serves 4 people

Ingredients

  • 1 lb fusilli or gemelli pasta
  • 1/2 cup olive oil
  • 2 cloves garlic, minced
  • 1 16-oz can garbanzo beans, drained
  • 1 15-oz can petite diced tomatoes
  • 2 - 3 tbsp fresh basil, chopped
  • 1/2 cup Parmesan cheese. grated
  • (Great northern or black beans can be used in place of the garbanza beans.)

Directions

  1. Prepare pasta according to package directions, making sure not to overcook. When pasta is almost done, saute garlic in olive oil in a separate saucepan.

  2. Stir tomatoes and beans into the oil and heat through.

  3. The pasta should be done at the same time the other ingredients are hot.

  4. Toss them together with the cheese and basil.

  5. Season to taste.
