Cheese Beignets

Serves 12 people

Ingredients
- 4 T butter
- 1/2 C water
- 1/2 C flour
- 2 large eggs
- 1 t prepared mustard
- 1/2 t salt
- 3/4 C parmesan or other cheese, grated
- 1 t worcestershire sauce
- 1 dash hot sauce
- Oil for frying
Directions

Bring water & butter to a boil.

Remove from heat and stir in flour, all at once. Stir until thick.

Return to heat and stir constantly until mixture forms a smooth, shiny mass. Remove from heat.

Beat in eggs, one at a time, mixing thoroughly.

Add remaining ingredients.

Drop by teaspoonfuls into hot oil. Fry, turning several times, until golden. Drain.

Can be kept in 250 degree oven for ½ hour to keep hot.

Can use other types of cheese, add chopped/dried herbs, or different types of mustard. Be creative depending on the type of cheese you choose.

Serve hot.
