Zucchini and Corn Taco Filling

Ingredients

  • 2 lbs zucchini
  • 2 ears corn
  • salt & pepper
  • cumin
  • chili powder

Directions

  1. Halve and slice zucchini; drizzle with oil.

  2. Saute til charred; then dice.

  3. Rub corn with oil.

  4. Saute 10-15 min til charred.

  5. Combine, add seasonings
