Cheese and Onion Toasties

For onion lovers, this is a really luxurious (but very simple) take on the basic cheese-on-toast.

Serves 2 people
Ingredients
- 4 thick slices of bread from a loaf
- 2 onions, medium-large
- Salt
- Black pepper, freshly ground
- Tabasco, or other sauce (optional)
- Cheese, sliced, enough to cover the 4 slices of bread (a good extra-mature cheddar is ideal).
Directions

Slice the onions thinly, into a medium saucepan with about half an inch of water.

Season the onions, place on heat, and bring to a simmer.

Cover the pan, and simmer gently for about 30 minutes until the onions are meltingly soft.

Uncover pan, and simmer on, gently, until almost all liquid has evaporated.

Meanwhile, toast the bread, under a grill, on one side, then turn and partly-toast (i.e. until just starting to brown).

Pile the onions onto the partly-toasted side of the bread. Even it out with a fork, but leave a margin of about half an inch all around (to allow for the melting cheese!).

Cover the onions with the sliced cheese, and return to the grill.

Grill until the cheese has melted and is just starting to bubble.

Serve and eat whilst still hot.
