Ingredients
- Pork butt, 3-4 lbs, cut into chunks
- Salt and pepper
- 1 t cumin
- 1 sm onion, halved
- 2 bay leaves
- 1 t dried oregano
- 2 Tb lime juice
- 2 c water
- 1 orange, juiced, and add rind to pot
Directions

Combine all in pot. Cover. Simmer or bake.

Liquid should just barely cover meat.

300/2 hrs.

Remove meat from liquid.

At this point you can pull pork into small chunks and slather w/ bbq sauce and bake

OR following:

Simmer liquid til thick – 10 min. Should have 1c.

Put pork onto wire rack set into cookie sheet. Slather with reduction. Bake at high heat or broil 5 min/side
