Carnitas

Ingredients

  • Pork butt, 3-4 lbs, cut into chunks
  • Salt and pepper
  • 1 t cumin
  • 1 sm onion, halved
  • 2 bay leaves
  • 1 t dried oregano
  • 2 Tb lime juice
  • 2 c water
  • 1 orange, juiced, and add rind to pot

Directions

  1. Combine all in pot. Cover. Simmer or bake.

  2. Liquid should just barely cover meat.

  3. 300/2 hrs.

  4. Remove meat from liquid.

  5. At this point you can pull pork into small chunks and slather w/ bbq sauce and bake

  6. OR following:

  7. Simmer liquid til thick – 10 min. Should have 1c.

  8. Put pork onto wire rack set into cookie sheet. Slather with reduction. Bake at high heat or broil 5 min/side
