Strawberry Rhubarb Crisp(or pie)

Mixture of 2 recipes, one from Epicurious(filling part) and one from Ina Garten(Crisp part)

Ingredients

  • 3.5 cups strawberries
  • 3.5 cups rhubarb
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1/4 cup corn starchh
  • 1 t cinnamon
  • 1/4 t salt
  • (Ina Garten additions-sometimes add, sometimes not!)
  • 1/3 c fresh orange juice
  • 1 t grated orange zest
  • Crisp
  • 1 c flour
  • 1/2 c brown sugar
  • 1/2 t salt
  • 1 c quick cooking oats
  • 12 T cold, diced butter

Directions

  1. Filling: Mix everything together…if using orange juice, dissolve corn starch in orange juice and then add to rest of ingredients.

  2. Crisp: Mix all ingredients except butter…cut in butter.

  3. Bake in an 8×11 pan for crisp, top and bottom pie crust for pie.

  4. 0 for 1-1.5 hours
