Categories: Breakfast
Ingredients
- 1 small apple (you can use a tbsp of lemon juice to keep from browning if you need)
- 1/2 cup flour
- 1/2 cup quick cooking oatmeal (run through a food processor)
- 2 tbsp white sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp vanilla
- 3/4 buttermilk or regular milk (remember you can make buttermilk with lemon juice and regular milk)
- 2 tsp oil
- 1 large egg
- 1 tsp oil
- 2 tsp butter
Directions
-
Peel and core and apple, cut in thin slices. Sprinkle with lemon juice if you are worried about browning.
-
Mix flour, oatmeal, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg in a bowl. Add vanilla, buttermilk, oil and egg. Mix until well blended. You can do this in a food processor if you like.
-
Heat butter and oil in a frying pan over medium high heat. Place 1/4 cup of batter into pan and place slices of apples on top. When you see bubbles, flip like regular pancakes. Mine looked very runny, but it worked fine.
-
Serve with butter and syrup.

Makes 6 quarter cup pancakes.
