Sticky Date Cake

Ingredients
- 1 1/2 C dates, chopped and pitted
- 1 1/2 C water
- 3/4 t bicarbonate of soda
- 75 g butter, chopped and at room temperature
- 3/4 C brown sugar, firmly packed
- 2 eggs
- 1 1/4 C self raising flour
- Caramel frosting:
- 3/4 C thickened cream
- 150 g Jersey caramels
Directions

Place dates and water in small saucepan; bring to boil.

Remove from heat; stir in soda, and cool.

Process cooled mixture until smooth.

Beat butter and sugar until pale.

Add eggs, singly until combined.

Stir in flour and date mixture.

Pour into paper-lined 20cm cake pan; cook at 180oC approx 25 minutes.

Stand in pan 5 minutes before turning onto rack to cool.

Frosting:

Combine cream and caramels in medium saucepan.

Stir over low heat until caramels are dissolved and mixture is smooth; pour into medium bowl and cover surface with plastic wrap.

Refrigerate until cold; beat with mixer until light and fluffy.

Spread frosting over top of cooled cake.
