Stuffed Mushrooms Royale

Ingredients
- 1 lb medium mushrooms (about 3 dozen)
- 3 TBSP butter or margarine
- 1/4 cup finely chopped green pepper
- 1/4 cup finely chopped onion
- 1 1/2 cups soft bread crumbs (from frecs bread, not in the can)
- 1/2 tsp salt
- 1/2 tsp to 3/4 tsp poultry seasoning
- 1/4 tsp pepper
- 1 TBSP butter or margarine
Directions

Heat oven to 350 degrees.

Wash, trim, and dry mushrooms thoroughly.

Remove stems; finely chop enough stems to measure 1/3 cup.

Melt 3 TBSP butter in skillet.

Cook and stir chopped mushroom stems, green pepper, and onion in butter about 5 minutes or until tender.

Remove from heat; stir in remaining ingredients except mushroom caps and 1 TBSP butter.

Melt the 1 TBSP of butter in shallow baking dish.

Fill mushroom caps with stuffing mixture; place caps filled side up in baking dish.

Bake 15 minutes.

Set oven control to 550 degrees.

Cook for 2 to 3 more minutes to get the tops crispy.
