Stuffed Mushrooms Royale

Ingredients

  • 1 lb medium mushrooms (about 3 dozen)
  • 3 TBSP butter or margarine
  • 1/4 cup finely chopped green pepper
  • 1/4 cup finely chopped onion
  • 1 1/2 cups soft bread crumbs (from frecs bread, not in the can)
  • 1/2 tsp salt
  • 1/2 tsp to 3/4 tsp poultry seasoning
  • 1/4 tsp pepper
  • 1 TBSP butter or margarine

Directions

  1. Heat oven to 350 degrees.

  2. Wash, trim, and dry mushrooms thoroughly.

  3. Remove stems; finely chop enough stems to measure 1/3 cup.

  4. Melt 3 TBSP butter in skillet.

  5. Cook and stir chopped mushroom stems, green pepper, and onion in butter about 5 minutes or until tender.

  6. Remove from heat; stir in remaining ingredients except mushroom caps and 1 TBSP butter.

  7. Melt the 1 TBSP of butter in shallow baking dish.

  8. Fill mushroom caps with stuffing mixture; place caps filled side up in baking dish.

  9. Bake 15 minutes.

  10. Set oven control to 550 degrees.

  11. Cook for 2 to 3 more minutes to get the tops crispy.
