Ingredients
- 1/2 loaf hearty dense French or Italian bread (actually, any kind of solid bread from a bakery); about 4 cups cubed into 2 inch cubes
- 1 red sweet pepper, quartered and thinly sliced crosswise
- 1 seedless (English) cucumber or green zucchini squash, chopped
- 1 tomato, chopped
- 1/3 of a red onion, thinly sliced
- 2/3 cup olive oil
- 1/2 cup red wine vinegar
- Pinch of sugar
- 1/2 tsp salt
- 6 ounces Greek feta, crumbles or small chunks
Directions

Spread bread on pan to dry out for a few hours or overnight.

Place pepper, cucumber, tomato, and onoin in a bowl. Mix together olive oil, red wine vinegar, sugar, and salt, and pour over the vegetables.

Toss to coat.

Add the bread and toss to combine.

Allow bread to sit for a bit to soak up the dressing.

Crumble feta cheese on top/

Cover and refrigerate up to overnight.
