Vege-Bread Salad

Ingredients

  • 1/2 loaf hearty dense French or Italian bread (actually, any kind of solid bread from a bakery); about 4 cups cubed into 2 inch cubes
  • 1 red sweet pepper, quartered and thinly sliced crosswise
  • 1 seedless (English) cucumber or green zucchini squash, chopped
  • 1 tomato, chopped
  • 1/3 of a red onion, thinly sliced
  • 2/3 cup olive oil
  • 1/2 cup red wine vinegar
  • Pinch of sugar
  • 1/2 tsp salt
  • 6 ounces Greek feta, crumbles or small chunks

Directions

  1. Spread bread on pan to dry out for a few hours or overnight.

  2. Place pepper, cucumber, tomato, and onoin in a bowl. Mix together olive oil, red wine vinegar, sugar, and salt, and pour over the vegetables.

  3. Toss to coat.

  4. Add the bread and toss to combine.

  5. Allow bread to sit for a bit to soak up the dressing.

  6. Crumble feta cheese on top/

  7. Cover and refrigerate up to overnight.
