Garden vegetable and Chicken Skillet

Ingredients
- 1 1/2 lb marinated chicken breast, cut into cubes
- Marinade: EVOO, balsamic and seasonings
- 1 summer squash, chopped
- 1 zucchini squash, chopped
- 1 med onion, chopped
- 1 med carrot, chopped
- 2 tbsp butter
- 3 c fresh spinach
- 3 cloves garlic, minced
- 1/2 tsp salt
- 1/2 tsp dried thyme
- 1/4 tsp pepper
- 1 c uncooked brown rice
- 1/4 c water or chicken broth
- 1 tbsp lemon juice
Directions

In large skillet, saute the chicken, squash, onion, and carrot in butter for 5-6 minutes until chicken is no longer pink.

Add spinach, garlic, and seasonings.

Cook for 2 minutes longer.

Stir in rice and water/broth.

Bring to a boil.

Reduce heat, cover and simmer for 10-15 minutes or until rice is tender.

Stir in lemon juice.
