Garden vegetable and Chicken Skillet

Ingredients

  • 1 1/2 lb marinated chicken breast, cut into cubes
  • Marinade: EVOO, balsamic and seasonings
  • 1 summer squash, chopped
  • 1 zucchini squash, chopped
  • 1 med onion, chopped
  • 1 med carrot, chopped
  • 2 tbsp butter
  • 3 c fresh spinach
  • 3 cloves garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp dried thyme
  • 1/4 tsp pepper
  • 1 c uncooked brown rice
  • 1/4 c water or chicken broth
  • 1 tbsp lemon juice

Directions

  1. In large skillet, saute the chicken, squash, onion, and carrot in butter for 5-6 minutes until chicken is no longer pink.

  2. Add spinach, garlic, and seasonings.

  3. Cook for 2 minutes longer.

  4. Stir in rice and water/broth.

  5. Bring to a boil.

  6. Reduce heat, cover and simmer for 10-15 minutes or until rice is tender.

  7. Stir in lemon juice.
