Family Styled Rolled Omelet

Ingredients

  • 1 c milk
  • 1/3 c flour
  • 8 eggs
  • 1 Tb Dijon mustard
  • salt & pepper
  • 2 pkg fzn chopped spinach
  • 1/2 c shredded cheddar cheese

Directions

  1. Brush 10×15 pan with oil.

  2. Line bottom with parchment, leaving overhang.

  3. Brush parchment w/oil.

  4. Whisk milk and flour.

  5. Add eggs, seasonings.

  6. Pour into pan.

  7. Sprinkle spinach over.

  8. Bake 350/10-12 til set.

  9. Sprinkle w/cheese, bake til melted, 2-4min.

  10. Beginning at one end, lift parchment and roll omelet tightly.
