Ingredients
- 1 c milk
- 1/3 c flour
- 8 eggs
- 1 Tb Dijon mustard
- salt & pepper
- 2 pkg fzn chopped spinach
- 1/2 c shredded cheddar cheese
Directions

Brush 10×15 pan with oil.

Line bottom with parchment, leaving overhang.

Brush parchment w/oil.

Whisk milk and flour.

Add eggs, seasonings.

Pour into pan.

Sprinkle spinach over.

Bake 350/10-12 til set.

Sprinkle w/cheese, bake til melted, 2-4min.

Beginning at one end, lift parchment and roll omelet tightly.
