Sweet Beet Cookies

Ingredients
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 2 tbsp sugar
- 1/4 tsp salt
- 1 fresh medium beet
- 2 tbsp canola or vegetable oil
Directions

eheat oven to 400.

Place the flour, baking powder, sugar and salt in a large bowl and stir to combine.

Peel the beet and shred with a fine grater.

Add 1/2 cup of the shredded beet to the flour mixture; coat the beet pieces with flour.

Add the oil and knead for 2 to 3 minutes until a dough is formed.

Roll to 1/4 inch thick and cut into shapes.

Bake for 15-17 minutes or until firm to the touch.
