Aunt Molly’s Spinach Casserole

This was my great aunt Molly’s standard holiday dish. After her death, I started bringing it to family gatherings, because it’s just not the holidays without Aunt Molly’s Spinach Casserole. Easy, quick, and delicious.

Ingredients
- 2 cups Ritz cracker crumbs (1 sleeve)
- 2 cups milk
- 2 packages frozen spinach (cooked)
- 4 eggs
- 1/2 stick margarine
- 2 cups shredded sharp cheddar cheese, divided
- 1 - 2 teaspoons nutmeg (adjust amount for personal preference)
- salt and pepper to taste
Directions

Mix together all ingredients, reserving 1 cup of cheese. Pour into buttered 9 × 13 baking dish. Mixture will be soupy, and needs to be spread out evenly.

Layer reserved cheese over top.

Bake at 350 for 45 minutes.
