St. Paddy’s Day Reuben on ”Rye” Paleo Wrap Primal

Ingredients
- 3 lb corned beef brisket prepared & sliced (made ahead or using leftovers)
- Swiss cheese slices
- Sauerkraut
- Green "Russian" Dressing (see recipe)
- "Rye" Paleo Wrap (see recipe)
Directions

Smother each half of the wrap with Green Russian dressing

Add a layer of swiss cheese to the bottom wrap

Top with hot/heated corned beef slices & sauerkraut

Add another slice of swiss cheese

Green Russian Dressing ~
-
1 ripe avocado
-
2 tbsp hot sauce
-
¼ cup heavy cream or coconut milk
-
Juice of ½ a lemon
-
1 tbsp grated horseradish (I actually added 2 tbsp because I like it zingier)

1 tsp blackstrap molasses (optional)
-
½ teaspoon ground ginger
-
½ teaspoon garlic powder
-
2 tbsp chopped curly parsley leaves
-
1 shallot, finely chopped
-
1 dill pickle spear, finely chopped

Salt to taste
- “Rye” Caraway Wraps ~
-
2 cups tapioca flour
-
2 eggs
-
1 ½ cups water
-
¼ tsp baking soda
-
Pinch of salt
-
Dash of garlic powder
-
1 tbsp caraway seeds
-
1 tbsp ghee or butter chopped Ghee or butter for pan
-
Beat egg and add water
-
Add garlic powder, salt, baking soda and blend well
-
Mix in tapioca flour until well incorporated, the mixture will be thin
-
Add the caraway seeds
-
Heat skillet to medium high temp, grease with a tsp or less of butter or ghee
-
Pour in batter to cover the skillet (not too thin but no more than ½ inch)

Cook until slightly browned, approximately 3 minutes
-
Flip and cook the other side another 2-3 minutes being careful not to burn
-
Cut in half and transfer to a 350F oven directly onto rack and allow to dry/crisp a bit

Top with the second wrap
