Sweet and Sour Red Cabbage

Serves 6 people

Ingredients

  • 2 Tbsp vegetable oil
  • 2 Tbsp butter or rendered bacon fat
  • 1 med. onion, chopped
  • 2 tart apples, cored, peeled and chopped
  • 1 med head red cabbage, shredded
  • 1 bay leaf
  • 1/3 c brown sugar
  • 3 c water
  • 1/2 c red wine vinegar
  • 2 Tbsp lemon juice
  • 3 to 4 whole cloves

Directions

  1. In a large skillet, heat oil and butter/bacon fat.

  2. Add onions and apple and cook down of med heat approx 2 to 3 minutes.

  3. Add all the other ingredients, stir and mix thoroughly and cover.

  4. Cook 1 hour, stirring occasionally.

  5. Remove the bay leaf before serving.
