Pumpkin Soup

Ingredients

  • lg onion, coarsely chopped
  • 8 oz leeks, sliced
  • 1/2 lb Yukon Gold potatoes, chunks
  • 5-6 lbs broth
  • 28 oz can pumpkin
  • 14 oz black beans
  • 1/2 c cilantro

Directions

  1. Saute onions and leeks, then potatoes 3min.

  2. Add broth, salt, simmer 20min.

  3. Add pumpkin.

  4. Blend with immersion blender.
