Like Rice Pudding

From a Jan. 1979 booklet my mom found. Low fat, ‘diet’ version of rice pudding. Not tried.

Cook time: 50 minutes
Serves 6 people

Ingredients

  • 2 2/3 cup small curd cottage cheese
  • 4 eggs, beaten
  • Artificial sweetner equal to 1/4 c. sugar
  • 1 tsp vanilla
  • 1/4 tsp salt
  • Nutmeg

Directions

  1. Preheat oven 325F.

  2. Thoroughly mix the cottage cheese, eggs, sweetner, vanilla and salt into a shallow baking dish. Sprinkle with nutmeg.

  3. Bake for 50 min. or until set so that a knife inserted comes out clean.

  4. Chill several hours or overnight.

  5. Serve cold.
