Like Rice Pudding

From a Jan. 1979 booklet my mom found. Low fat, ‘diet’ version of rice pudding. Not tried.

Ingredients
- 2 2/3 cup small curd cottage cheese
- 4 eggs, beaten
- Artificial sweetner equal to 1/4 c. sugar
- 1 tsp vanilla
- 1/4 tsp salt
- Nutmeg
Directions

Preheat oven 325F.

Thoroughly mix the cottage cheese, eggs, sweetner, vanilla and salt into a shallow baking dish. Sprinkle with nutmeg.

Bake for 50 min. or until set so that a knife inserted comes out clean.

Chill several hours or overnight.

Serve cold.
