Zucchini Bread

Ingredients

  • 3 Cups all purpose white flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3 tsp ground cinnamon
  • 3 eggs
  • 1 cup vegetable oil
  • 3 tsp vanilla extract
  • 1 Cup white sugar
  • 1 1/4 cups brown sugar (loose packed)
  • 2 cups grated zucchini w/peel
  • 1 cup chopped walnuts (optional)

Directions

  1. Pan Coat (medium to heavily) and flour two 8×4 inch bread pans. Preheat oven to 325 degrees F.

  2. Combine flour, salt, baking powder, baking soda, and cinnamon together in a LARGE bowl.

  3. Beat eggs, oil, vanilla, and sugar(s) together in a large bowl. Added dry ingredients to the creamed mixture, and mix WELL. Stir in Zucchini and optional nuts until well combined. Stir, mix, combine again. Mix well, and mix well again.

  4. Bake for 40-60 minutes, or until tester inserted comes out clean.

  5. Cool in pan on rack for 20 minutes.

  6. Remove bread from pans and cool again.
