Ingredients
- zest and juice of 2 unwaxed lemons, finely grated
- 50g caster sugar
- 125g pearl barley
Directions

Mix the lemon zest and sugar in a large glass bowl. Rinse the barley and add to the bowl with 1.2 litres boiling water. Stir well and leave to cool.
- Add the lemon juice to the cooled mixture. Strain through a sieve and chill. Serve with lots of ice and strawberry cream cheese sandwiches.
