Meatball Kofta Curry

Ingredients
- Meatballs:
- 450-550 g/1 lb ground beef
- 1 TBSP coconut flour (process unsweetened coconut)
- 1 egg
- 1/2 tsp garam masala
- 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- Curry Sauce:
- 2-4 TBSP Ghee
- 1 large onion, finely chopped
- 2-3 cloves garlic, crushed
- 2-3 bay leaves
- 2 2" cinnamon sticks
- 5 green cardamoms
- 5 whole cloves
- Add:
- 1/2 cup tomato sauce
- 1 tomato, diced
- 1 tsp turmeric
- 1/2 tsp Kashmiri/Indian red chilli powder
- 1/2 tsp ground ginger
- 1/2 tsp garam masala
- 1 tsp salt
- 1/2 cup natural (plain) yogurt
- Add:
- 1 cup (1/2 pint) water
- Garnish:
- Chopped parsley or coriander leaves
Directions

Mix ground beef with coconut flour, egg, garam masala, cinnamon, ginger. Roll into plum sized meatballs.

Heat ghee in saucepan. Add onion, garlic, bay leaves, cinnamon sticks, cardamoms, cloves. Fry till golden.

Add tomato sauce, tomato, spices and salt. Cook 5 minutes, remove from heat, add yogurt, stir in, return to heat. Cook 5 minutes.

Pour in water and add meatballs to pan; bring to a boil.

Cover and cook another 30 – 45 minutes.

Serve hot garnished with fresh coriander leaves or parsley.
