Salsa Lime Pork Tenderloin

Serves 3 peopleIngredients
- 1 teaspoon garlic powder
- 3/4 pok tenderloin, fat trimmed away
- Nonstick cooking spray
- 1/8 teaspoon pepper
- 1 onion, chopped
- 1 cup tomato juice
- 1 lime, sliced
- 8 small red pototoes, cut in half
- 1 cup fresh salsa
Directions

Sprinkle garlic powder over pork

Lightly coat a skillet with non-stick cooking spray and brown the pork until it is no longer pink

Sprinkle with pepper, remove from skillet, and set aside

Saute onions for 2 to 3 minutes

Pour tomato juice into the slow cooker and place pork into the tomato juice

Cover with lime slices and sauteed onions

Arrange potatoes around the edges and pour salsa on top

Cover and cook on low for 6 to 7 hours

When pork is cooked through and potatoes are tender, remove from the slow cooker and cut into individual portions

Place each portion on a serving plate, top with remaining sauce, and serve
