Cream of Red Pepper Soup

Ingredients
- 1 tbsp flour
- 2 cloves garlic, minced
- 1/2 tsp cumin, ground
- 2 1/2 cups milk
- 5 red bell peppers, sliced
- 1/2 water, or veggie stock
Directions

In a soup pot, fry the onions and garlic in some oil until the onions are translucent. Add cumin and cook for 1 minute. Add the red bell peppers and cook covered over low heat 10-15 minutes. Gradually sprinkle in flour. Cook, stirring, another 5 minutes. Add stock or water and cook 2-3 minutes, covered.

Remove from heat and puree, in portions, with the milk. If you like your soup served hot you can reheat it gently at this point.

Add salt and pepper to taste.
