Banana Nut Bread

Ingredients

  • 1/2 cup butter or margarine
  • 1 cups sugar
  • 2 eggs
  • 1/2 tsp vanilla
  • 1/8 teaspoon salt
  • 1 teaspoons soda
  • 2 cups flour
  • 3 large bananas, very ripe, mashed
  • 1/2 cup finely chopped pecans

Directions

  1. Mash the bananas; add vanilla to bananas.

  2. Cream together butter and sugar. Add eggs, one at a time, beating after each addition. Add mashed bananas, stir lightly.

  3. Sift dry ingredients together; add to creamed mixture. Stir in chopped pecans.

  4. Pour banana nut bread batter into a well-greased loaf pans; bake at 325° for about 1 hour and 15 minutes, or until a toothpick inserted in center comes out clean. This banana nut bread recipe makes 1 loaf.
